Karadjordje steak - delicious improvisation

The legend of Karadjordje steak was born in the famous Belgrade restaurant Golf (in the heart of Kosutnjak). The famous Milovan Mića Stojanović, a professor of culinary art, trained the restaurant staff back in 1956 when he found himself in an awkward situation, which could shake both his and the restaurant's reputation.

Namely, at that time, the regular guest of the restaurant was the announcer of Radio Belgrade, ordering her favorite dish, she had no idea that this act preceded the creation of the famous gourmet dish - Karadjordje steak. Her favorite dish was "Kyiv cutlet", for the preparation of which there were no ingredients at that time. The ingenious Mića Stojanović did not want to risk the reputation of the restaurant, even his own, so he decided on an unusual improvisation. Instead of the missing chicken, he used veal steak, while he replaced the butter with kajmak. He rolled the steak with cream, and added potatoes, lemon, and green beans (in the shape of "Karađorđe star") as a side dish. Fearing that the new dish would look "empty" and "dry", he poured tartar sauce over the steak. Mica served the dish in person!

Little to say the guest was thrilled! She immediately asked for the name of the dish and his recipe. The ingenious Mića, as if from a cannon, answered that he was in "Karađorđe steak", and even in his wildest dreams, he could not have guessed what would follow! The guest, the announcer from Radio Belgrade, was much more important than he could have imagined. Tamara Broz was Tito's daughter-in-law!

This culinary endeavor could not go unnoticed. Shortly afterward, culinary professor Milovan Stojanović became Tito's chef. He cooked for him for more than a quarter of a century, and during that time he designed more than 200 dishes.

Karadjordjeva steak is just one of the many specialties that Mića gave to the gourmet world, but it is certainly the most famous. Milovan Mića Stojanović is a world-renowned chef and his career has lasted for more than half a century. In half a century of his long career, he left over 200 dishes to the culinary world. These dishes mostly bear the names of prominent people and each dish tells a unique story. The list of guests enchanted by his dishes is really large, and it includes historical greats such as Sofia Loren, Elizabeth Taylor, Churchill, Josip Broz Tito, Muammar Gaddafi, Rockefeller, Kennedy, and many others.
